Is Sweet Clover Honey raw and unprocessed? 
Yes, all of our honey—including Sweet Clover—is 100% raw, unheated, and unfiltered. This means it retains all the beneficial components that naturally occur in honey: enzymes, antioxidants, trace vitamins, minerals, and antibacterial properties. We don’t pasteurize or ultra-filter, so you get honey that’s as close as possible to how the bees created it.
Does Sweet Clover Honey crystallize? Is that a bad thing? 
Yes, crystallization is completely natural and expected in raw honey. Because we don’t heat or filter it, the natural glucose in the honey will eventually form crystals over time. This doesn’t mean it’s gone bad—in fact, it’s a sign of high quality. If you prefer liquid honey, you can gently warm the jar in a bowl of hot water (not in the microwave) to restore its fluid texture without harming the beneficial compounds.

Perfect! I travel a lot both international and domestic. Since I discovered Ames Farms I’ve searched the world I travel to for a honey better than your sweet clover honey. I was in Athens and Istanbul last month. I found some good honey there. However, it was not better than Ames Farm. I love it.
The honey arrived and it was crystallized. I agree there isn’t a lot of sweet clover grown as there was 40 years ago. The honey is a mix with Basswood honey, but it’s a good flavor. I used to be a bee keeper with my dad in a suburb of Minneapolis. Brings back good memories.
