When peaches are at their ripest in early August, savor their peak juiciness in this refreshing cocktail! Made with real, raw honey and ginger, this recipe is a real thirst-quencher and makes about 8 drinks.

2 ripe peaches
2 T minced ginger
1 C all-purpose real raw honey
1 C water
2 liters club soda
15 fresh mint leaves
- In a small saucepan, heat the water and ginger and simmer for 2 minutes. Remove from heat and stir in the honey until dissolved. Let steep and cool for about 30 minutes, then strain the liquid through a piece into a bowl.
- Slice the ripe peaches and distribute among 8 tall glasses. Feel free to slightly muddle the peaches with a wooden spoon to release more of their sweet juices. Add ice as desired.
- Pour 2 tablespoons of the honey-ginger syrup into each glass and top with club soda. Stir and serve garnished with mint leaves. For a stronger option, add a splash of good quality dark rum.
